HANDMADE COCONUT FUDGE
Coconut Gems are delicious crumbly and chewy treats which offer 1/3 less sugar than the original coconut ice or traditional fudge. This moist and velvety gem is handmade, gluten-free and an ideal accompaniment to a cup of tea or coffee - divine!
Coconut Gems are the creation of food technology specialist, Saba Ahmed.

The idea was inspired by Saba's long-held fondness for coconut ice. As a child she had been attracted by the bright pink colour (pink had always been her favourite and still is!).
But despite its visual appeal, she sometimes found it too sweet and the heavy texture too slippery.

Once she took up the project to reduce the sugar content and soften the texture she became passionate about developing a lighter, healthier sweet.
Saba worked on this recipe for 7 months. She combined the recipes of the traditional 'barfi', authentic Pakistani fudge with coconut ice, which eventually created coconut gems.

Coconut Gems are handcrafted using high quality all-natural ingredients. Made from coconut, milk and sugar, they don't contain nuts, grains or alcohol. They are also egg-free, gluten-free and made without any artificial preservatives, flavourings or additives. These gems contain 33% less sugar than most similar products and have a finer smoother texture.

Coconut Gems are available as balls or cubes and come in a variety of colours - creamy-white (original), pink, yellow, pale green and orange (or a mix of your choice) - so they look as wonderful as they taste.
